Cheese Wrapped in Grape Leaves

Today I tried Brazos Valley Farm’s Eden Brie. This cheese wheel has a line of vegetable ash down the center and is wrapped fig leaves. The brie is wrapped towards the end of the cheese making process and will absorb the flavors of the leaves as it ages (click here for some additionl info on leaf-wrapped cheese). Due to the vegetable ash and the fig leaves, this brie had a very earthy and complex flavor. In addition to being a tasty cheese, the presentation was beautiful.

I won’t be making my own cheese any times soon, but I would love to replicate the leaf-wrapped look. Here is a recipe from Cat Cora I can’t wait to try.
